Brunch bake is a crustless quiche that's perfect for entertaining Masters guests.
It is packed with flavor from fresh spinach, bacon and cooked shrimp, and it comes together in a snap.
There are so many ways to vary the recipe, using your favorite vegetables, meats and cheeses.
Don't like shrimp? Leave it out. Add ham or sausage, switch up the cheeses, stir in sauteed onions and bell peppers. The variations are limitless.

Heat oven to 400 degrees (375 degrees if using a glass baking dish). Spray a 9-by-9-inch baking dish with nonstick spray.
Spread the spinach in the bottom of the prepared dish. Sprinkle with the bacon, shrimp (if desired) and the cheeses.
Beat the eggs in a large bowl until fluffy. Whisk in the milk, flour, baking powder, cottage cheese, salt and pepper.
Blend well and then pour over the spinach, bacon, shrimp and cheeses.
Bake for 15 minutes and then reduce to 350 and bake for an additional 25 to 30 minutes, or until top is lightly brown.
